I have fallen in love with this variation of ‘chia pudding’ so much, I can genuinely eat it at any time of day. A simple, easy, healthy go-to in my household. An absolute winner with visiting family, friends and guests alike.
Chia Seed, Peanut Butter & Blueberry Compote Pudding
PREP TIME: 15 minutes
COOLING TIME: 1-2 hours
SERVINGS: 3 large or 6 small
INGREDIENTS:
COMPOTE:
1 cup blueberries (frozen or fresh)
1 tbsp orange juice
1 tbsp chia seeds
CHIA PUDDING:
1 cup unsweetened dairy-free milk
1/2 cup dairy-free yoghurt (for a decadent version, try using coconut milk)
1 tsp vanilla (optional)
1-2 tbsp maple syrup (to taste)
3 tbsp natural salted peanut butter (plus extra for topping)
1/3 cup chia seeds
Fresh blueberries and strawberries
METHOD:
Add blueberries and orange juice to a small saucepan. Warm over medium-high heat until bubbling. Then lower heat to medium and cook for 2 minutes, stirring occasionally. Remove from heat and add chia seeds. Stir to combine.
Divide the compote between three small serving dishes and set to one side to cool (around 10 minutes).
Add dairy-free milk and yoghurt (or coconut milk if using) to a blender, along with vanilla (optional), maple syrup, and peanut butter. Blend on high to combine ingredients. Taste and adjust flavours as needed (add more maple syrup for sweetness or more peanut butter for saltiness).
Add chia seeds and pulse a few times, however, be sure not to blend as you want the chia seeds to stay whole.
Divide pudding mixture between the three serving dishes, on top of the compote.
Cover well and set in fridge to chill for at least 1-2 hours (preferably overnight).
To serve, top with peanut butter and fresh blueberries.
Eat & enjoy!
STORAGE:
Cover and store in the fridge 3-4 days.
HEALTH BENEFITS:
Despite their tiny size, chia seeds are loaded with antioxidants and are highly nutritious. They are packed with fibre, protein, omega-3 fatty acids, and micronutrients. They may help reduce the risk of heart disease (due to fibre and ALA content) and help improve bone mineral density (due to calcium, magnesium, phosphorus, ALA content).
